Classroom

Career and Technical Education classes combine standard classroom teaching styles with projects based learning and hands-on skills.

Students can complete in Baking & Pastry through passing the 4 main classes:

Baking & Pastry Foundations focuses on the basic preparation and service of safe food, basic introduction to industry safety standards, restaurant equipment, kitchen essentials, and communication concepts in the baking industry. Students utilize problem-solving techniques and participate in hands-on activities to develop an understanding of course concepts.

Baking & Pastry 1 will educate students on the basics of the industry. This course starts with teaching students about the various ingredients used for baking and pastry arts and how these ingredients react to each other to make products. It will also instruct students on various breads such as quick breads, artisan and yeast breads, and laminated doughs.

Baking & Pastry 2 will instruct students on how to make cookies, pies, and cakes. It educates students about the various types of icings and frostings and introduces them to custards, sauces, and creams. This course also teaches students how to make ice cream and gives them some knowledge of how to adapt recipes to meet special dietary needs.

Baking & Pastry Advanced will educate students on how to make some of the more intricate products of the industry. It will introduce students to tortes and specialty cakes, petits fours, and plated desserts. This course also will give students some experience with chocolate and sugar work.

Simulated Workplace

The Brew and Grey Coffee and Bake Shop is a Simulated Workplace that is run out of the classroom. Students create the menu and perform as Baristas, Cashiers, Dishwashers, Delivery people, Managers, and Bakers.

Students that complete all four courses in the program may apply for the Brew and Grey Scholarship.

Skills USA

Baking and Pastry will start Skills USA in the 2025-2026 school year, where students will have the opportunity to compete against other schools and programs.

Instructors

Mrs. Johanna Cogar

Mrs. Johanna Cogar is a 2002 graduate of Lewis County High School. She has her Bachelor’s Degree from Fairmont State University in Family and Consumer Sciences Education, a Master’s Degree from Salem International University in Curriculum and Instruction specializing in Educational Technology, and 15 additional college training credits. She has a ServSafe Food Protection Manager Certification and is capable of training and proctoring exams for others. She is currently working on earning her National Board Certification for Professional Teaching Standards.

Mrs. Cogar is a wife and mother of four beautiful children. She enjoys spending time with her family, encouraging all their endeavors, baking, and reading.
